How to Care for Peonies (and When They're in Season)

Peonies are the flower people call the studio about mid-week. A peony bought on Monday looks like a different flower by Wednesday.
They arrive as tight buds by design and open over two to four days. A bud that looks small and hard on day one can double in size by day three.
Why do peonies arrive closed?
Because a peony cut open spends its short life traveling instead of sitting on your table. Growers cut at the stage where the bud gives slightly under a thumb and shows a seam of color.
The Chicago Botanic Garden puts the same test plainly: select buds that have just begun to open and feel similar to a marshmallow. We select peonies at the Los Angeles Flower Market in the morning and build with them the same day. You get the flower at the start of its life.
How long do cut peonies last?

University of Alaska Fairbanks trials measured average vase life of 8.6 days in one season and 6.0 days in the next. The reported consumer life is seven days. Cultivar and handling move the figure more than anything you do at home.

How do you open peonies faster, or slow them down?
Temperature is the dial. A warm room and warm water bring a bud open in a day or two, and a cool room holds it back for an occasion later in the week.
A drooping bud is usually thirsty rather than finished. The Chicago Botanic Garden notes it can often be revived in a vase of warm water. If a bud feels sealed shut, roll the outer guard petals back gently with a thumb and the rest usually follows.
Are the ants on peonies a problem?
No, and they are not doing the flower a favor either. Ants come for the sweet coating on the buds.
University of Minnesota Extension is direct about the old story: ants are not necessary for peonies to bloom, and they cause no damage. Every stem is rinsed and checked at the studio bench before it goes into an arrangement.
When are peonies in season in Los Angeles?
Late spring. California field peonies reach the flower market around April, peak in May, and taper through June.
Outside that window the market carries imported stems, mostly in late autumn. The price reflects the distance. I build peony-led pieces hardest in spring and let ranunculus and garden roses carry the shoulder seasons.
How do peonies work in a garden-style arrangement?
They earn their place because they change shape every day, which is what loose, asymmetrical work is built around. We set the buds at different heights and leave room around them.
